Eggs: at room temperature

Yogurt: plain milk yogurt or Greek Yogurt. In France, a classic yogurt container is 125g. If you’re in the US, choose the 4oz.

Fine sugar: caster or granulated sugar

Vegetable oil with neutral flavor like canola oil

All-purpose flour: sieved

Baking powder

Vanilla extract: optional

How to make this French Yogurt Cake?

Pour the yogurt into a mixing bowl. Keep the container, rinse it, and dry it. It will serve as a measuring cup.

Add sugar to the yogurt. Mix well.

Add the eggs one at a time. Beat well after each addition

  • Drain your yogurt before using it if you see a bit of liquid when opening it.
  • Ingredients at room temperature.
  • Do not overmix the batter.
  • To prevent hard edges and a domed cake, use a wet strip around the sides of the pan.
  • Do Not overbake; it will dry your cake, and you will lose the moist texture.

You can freeze this yogurt cake for up to 2 months. Simply cover it with cling film and store it in an airtight container. If desired, you can also slice the cake, freeze the individual slices, and thaw only the number of slices you need.

Thaw at room temperature the day before in the fridge.

Easy and quick to make French yogurt cake

Ingredients

  • 1 container - 125g (1/2 cup) plain yogurt - see notes
  • 2 containers - 200g (1 cup) fine sugar
  • 3 eggs
  • 3 containers - 210g ( 1 cup + 3/4 cup) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 container - 50g (1/4 cup) vegetable oil, neutral flavor:
  • 1 teaspoon vanilla extract (optional)

Method

  • 1)

    In this recipe, we use the yogurt container as a measuring cup.

    Preheat the oven to 180°C (350°F). Line an 8-inch (20cm) cake pan with baking paper.

  • 2)

    Pour the yogurt into a mixing bowl. Keep the container, rinse it, and dry it. It will serve as a measuring cup.

  • 3)

    Add 2 containers of sugar to the yogurt. Using a whisk, mix well.

  • 4)

    Add the eggs one at a time. Beat well between each addition.

  • 5)

    Add 3 containers of flour and baking powder. Mix until incorporated but do not overmix.

  • 6)

    Add 1/2 container of oil, and vanilla extract, mix.

  • 7)

    Pour the batter into the prepared, lined cake pan and bake for about 35 minutes or until a toothpick inserted into the center comes out clean and the top is slightly golden.

    Note: I place wet cake strips around the pan. It helps keep the sides moist and limits the dome on the top, but it usually takes 5 extra minutes to bake the cake. So, start to monitor the cake after 30 minutes of baking.

    Remove the cake from the pan  and let the cake cool on a rack.
