Ingredients:

Sweet pastry dough:

Butter: unsalted and softened.

Powdered Sugar: sieved.

Ground almonds: sieved. (If allergic to almonds, replace with all-purpose flour)

Salt: to enhance the flavor.

Egg: at room temperature.

Vanilla extract: optional, but enhances the flavor.

All-purpose flour: choose a low gluten flour for the best result.

Filling:

Blackberry jam: choose a good quality jam that is not too runny.

Fresh blackberries: avoid frozen blackberries to prevent excessive water.

Decoration:

Egg wash: an egg yolk mixed with 1 tablespoon of milk for a golden crust

Light brown sugar to sprinkle on top, it adds a crispy texture.

How to make the blackberry galette?

This galette is easy to make. Here’s the step by step photos to give you an idea of the process.

Prepare your homemade sweet pastry dough:

  • Cream the butter.
  • Add the powdered sugar. Mix.
  • Add ground almonds and salt. Mix.
  • Add the egg and vanilla extract. Mix.
  • Add the flour and mix. Stop as soon as the flour is incorporated, even if the dough is not completely together. (See picture). Do Not overmix
  • Turn the dough out onto a clean surface and gather into a ball. Flatten into a 1-inch thick disc using your hands. Wrap the dough in plastic wrap and place in the fridge for 1 hour.

  •  Roll out the dough into a circle, about 12 inches (30cm)
  • Spread the blackberry jam over the dough, leaving 2 inches (5cm) border.

Blackberry galette: an easy, simple recipe turned into a great dessert.

Ingredients

Sweet Pastry Dough

  • 115 g (1/2 cup) unsalted butter, softened
  • 75 g (3/4 cup) powdered sugar - sieved
  • 25 g (1/4 cup) ground almonds- sieved
  • 1 pinch salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 250 g (2 cups) all-purpose flour - sieved

Filling

  • 60 g (3 Tbsp) Blackberry jam
  • 360 g (3 cups) Fresh Blackberries

Decoration

  • 1 egg yolk
  • 1 tablespoon milk
  • light brown sugar to sprinkle

Method

  • 1)

    In the bowl of your stand mixer, fitted with the paddle attachment, cream the butter until it’s completely soft and spreadable.

  • 2)

    Add the powdered sugar and mix until fully incorporated.

  • 3)

    Add ground almonds and salt, and mix.

  • 4)

    Add the egg and vanilla extract. Mix until incorporated.

  • 5)

    Add the flour and mix. Stop as soon as the flour is incorporated, even if the dough is not completely together. Do Not overmix as we want to avoid gluten development.

  • 6)

    Turn the dough out onto a clean surface and bring it together into a ball with your hands. The dough should come together easily. Then, using the palm of your hand, knead the dough slightly and flatten the dough into a 1-inch-thick disc.

    Wrap the dough in wrap film. Chill in the fridge for 1 hour. Don’t skip this step. At this stage, the texture is too soft and sticky to be rolled out immediately, so the dough needs to firm up a little bit. It will also allow for the gluten to relax.

  • 7)

    After chilling, roll the dough into a large disc (about 12 inches / 30cm) between two sheets of parchment paper or on a lightly four-dusted surface, 3mm thick (almost 1/8 inch). Avoid adding too much flour; it could change the texture of the dough.(If you prepared the dough ahead of time, allow it to come to room temperature before proceeding).

    Trim the rim for a nice circle shape (optional) and transfer the dough into a baking parchment (if you didn’t use one for rolling) and place on a baking sheet.

Filling

  • 1)

    Spread the blackberry jam over the dough, leaving 2 inches (5cm) from the border.

  • 2)

    Add fresh blakberries on the top of the jam.

  • 3)

    Gently fold up the edges of the dough over the filling all the way around, overlapping the dough as necessary.

    Brush the dough with an egg wash (an egg yolk mixed with 1 tablespoon of milk) and sprinkle with light brown sugar.

    Bake for 20-25 minutes or until the crust is golden.

    Remove from the oven and allow to cool before serving.
